Preheat the oven to 180 °C. Line the inside of the fish with lemon and wrap with leek strips on the outside. Season the fish with half of the flavour sachet provided, add salt and pepper to taste.

Place the fennel and butter inside the bag and lay the fish on top. Add remainder of the contents of the flavour sachet to the bag.

Fold the bag to close, place on a baking tray and bake for 30 - 40 minutes, depending on the size of the fish. Remove the fish from the bag and spoon over sau
