For relish: In a small saucepan, heat olive oil over medium heat. Add peppers and season with salt and pepper.

Cook, stirring occasionally, until peppers begin to soften, about 6 minutes. Add Nando’s Mild PERi- PERi Sauce and sugar and simmer until vegetables are tender, about 5 more minutes.

Remove from heat.

For omelette burrito: Heat a pan over high heat. Add the canola oil and bacon and cook till crispy.

Remove from the pan, keeping the oil and bacon fat, add the butter and melt over low heat.

Whisk the eggs in a bowl and season with salt and pepper. Pour the egg mixture into the pan. Cook the eggs by whisking constantly and shaking the pan vigorously until the eggs begin to set but are still quite loose.

Add the tortilla to the pan, placing it gently on top of the egg. Cook for 30 seconds and flip the omelette. Cook for 1 more minute and remove from heat.

Load the omelette with the bacon, avo, feta and pepper relish and fold like a burrito. Slice in half and eat with more of the PERi-PERi pepper relish on the side.
