Cream butter until light yellow and add in the sugar, egg and vanilla. Mix together with electric mixer for approx. 3 minutes. Add the cottage cheese.

Place a layer of biscuits in a baking tray and sprinkle with sherry.

Spread half of the cottage cheese mix over the biscuits. Add another layer of biscuits, sprinkle with sherry and cover with the cottage cheese mix. Leave in the fridge.

Melt the chocolate in the microwave on 70% power.

Mix the cacao, PERi-PERi sauce and water until smooth. Add this to the melted chocolate.

Spread the chocolate mix over the tart and leave in the fridge overnight.
